Fancifull Meets Tumalo Farms
Tumalo Farms was founded by Flavio DeCastilhos in 2004. Before then, he had worked in Silicon Valley, co-founding webmd.com. During a vacation in Brazil, he became enthralled with the wonderful tastes and textures of the artisan cheeses he tried. After this experience, he dedicated himself to the art of cheese making and studied his craft in the midwest and throughout Europe.
Eventually he decided to start his business in Central Oregon, a place where he believed the terroir was perfect for making cheese. His instincts proved to be correct, as his cheeses have won dozens of awards in the few years since he started producing them, including first place at the 2007 and 2008 american cheese society compitition.
Flavio is a true artisan, and his passion for crafting world class cheese is far more important than profit. Eggs (room temperature)
Fresh grated Tumalo Classico Cheese (use a Microplane)
Cream, half and half, or buttermilk
Freshly chopped tomato
Fresh basil, minced
I love to use this cheese with eggs in the morning. Use a whisk to beat the eggs with a little cream or buttermilk. Melt some butter in the pan at medium heat and add the eggs. Fold them into themselves to keep a skin from forming and to keep them moist throughout. Just as they are beggining to set up, add the grated Tumalo cheese and mix well – the cheese will blend completely with the eggs very quickly. Immediately add the tomatos and basil. Continue to cook but dont let them get too dry. Salt shouldnt be needed, but can be added to taste.
