One beautiful afternoon in a now long-ago May we were driving up to Paris from the south of France and decided to pull off at a convenient rest stop and take our lunch. We were not unprepared, having stocked up on provisions that morning in St. Remy. A lovely red wine, goat cheese, olives, bread, sunshine and a magnificent view provided a memorable break in our journey. We built this on a wood cutting board that you can put to use immediately with Sylvain Fadat's fabulous Lou Maset from the south of France along with with goat cheese, a cave-aged Gruyere, chocolate truffles, olives and Crostini to make any day memorable.
