Estero Gold Montasio

Estero Gold Montasio is fashioned after a Northern Italian Cheese, with a nuttiness reminiscent of Asiago, made with raw jersey milk. The farm dates to 1918 when Karen Bianchi Moreda's grandparents first bought the 640 acres north of Petaluma, CA . In 2008 she decided to also make it a creamery and wanted to make a cheese like the kind her grandparents always had on the table when she visited as a child. The result is the Estero Gold. Her son Joe came onboard as the cheesemaker and her other son JIm is now their herdmaster. The rolling hills give the cows plenty of room to roam, to relax and produce great milk for a terrific cheese. The Montasio is aged about 5-6 months and has the stamina to stand up to a glass of red, or grate it over pasta or in your scrambled eggs. Whatever you do, enjoy it.

Fra' Mani's Philosophy is to keep old world food traditions alive in taste and craft, using ingredients of the highest quality from sustainable sources. Paul Bertolli the curemaster for Fra'Mani is a renowned chef with two cookbooks to his name: Chez Panisse Cooking and Cooking by Hand and a list of accolades a mile long. There are arguments as to which is his best salami. The Salametto which is coarsely ground, garlic scented, and full of flavor may be our best seller. But the Piccante' Spanish influenced dry chorizo with its brick red color and seasoned with pimenton del a vera is slightly smoky holds its own and has a huge fan base. Made in Northern California the meat comes from family far4mers committed tot he well being fo their animals and their land. The animals are never given antibiotics and are raised on pasture.

Our Heritage

Fancifull has a long history of celebrating American Artisans. It is in our blood. Terry's grandfather was a farmer in Northern California and her cousins grew organic beef before it was fashionable. The farmers and crafts people who make the product we sell in our shop need our support and we need them because they honor our planet and the people, animals and plant life on it. And they make delicious food! This doesn't mean we don't also want our friends and compatriots in other countries to do well either. We want those great cheeses, win es and traditions to persist the world over. While keeping a good mix of product in our shop, we are very excited about the food renaissance that is going on in the United States
